Baked-on grease, technically identified as Polymerized Lipids, occurs when fats undergo a molecular change under high heat and bond to the stainless steel. We remediate this using Polysorbate 20, a non-ionic emulsifier that breaks these lipid bonds without the use of caustic degreasers, followed by 296-degree Dry Steam to safely lift the carbonized residue while preserving the 304 stainless steel finish.
